Ingredients: [‘meyer lemons’, ‘water’, ‘granulated sugar’, ‘granulated sugar’, ‘white chocolate’]

Quantity of Ingredients: [“4 meyer lemons”,”2 cups water”,”3 1/2 cups granulated sugar”,”3 cups granulated sugar, as needed for coating “,”2 lbs white chocolate, chopped into small pieces “]

Number of Servings: 1

Steps: [‘In a heavy saucepan, combine water and sugar. Place over medium high stove until sugar dissolves. Cut lemons in half length wise, then slice into 1/4″ thick slices. Add lemons to sugar syrup and bring to boil. Lower heat and continue to simmer for 1 hour, dunking the floaters occasionally. Remove from heat and remove slices from syrup using a slotted spoon. Place slices in single layer on wire rack over a cookie sheet lined with waxed paper or parchment. Allow to dry. You can speed up the drying process by placing them in a slow oven (170 degrees) with the door propped slightly open or warm the oven, turn it off and leave them overnight. When dry, place them in a ziploc bag with remaining sugar and shake to coat. Melt white chocolate over a double boiler and dip the slices, returning them to the wire rack to solidify.’]
