Fruitcake for Christmas

I got this recipe off another website. It is very simple and easy to make. I brought it to work and everyone loved it. It is not a heavy fruitcake. It is light and moist. Enjoy

Ingredients: [‘brown sugar’, ‘flour’, ‘baking soda’, ‘cinnamon’, ‘cloves’, ‘allspice’, ‘nutmeg’, ‘eggs’, ‘lemon zest’, ‘vanilla extract’, ‘raisins’, ‘nuts’, ‘dried fruit’, ‘butter’, ‘brandy’]

Quantity of Ingredients: [“2 cups brown sugar”,”3 cups flour”,”1/2 tablespoon baking soda”,”2 tablespoons cinnamon”,”2 tablespoons cloves”,”2 tablespoons allspice”,”2 tablespoons nutmeg”,”4 eggs”,”2 tablespoons lemon zest (I also added 1 tsp. lemon extract)”,”2 tablespoons vanilla extract”,”1 1/2 cups raisins”,”1 1/2 cups chopped nuts”,”1 1/2 cups dried fruit (I soaked my dried fruit in 1 cup brandy for a week)”,”1 1/2 cups melted butter”,”1/2 cup brandy”]

Number of Servings: 40

Steps: [‘Preheat oven to 225 degrees. Grease and flour two loaf pans.’, ‘In a large bowl, combine sugar, flour, soda, spices, eggs, lemon rind, vanilla, 1/2 cup brandy, fruit, nuts and butter. Mix thoroughly.’, ‘Pour into pans.’, ‘Bake for 1 hour. (I had to bake it for two hours.).’, ‘Wrap cooked cake in foil. Sprinkle 2 tablespoons brandy over the cake everyday for 2 weeks.’]
