Janet’s Breakfast Quesadilla

For dietary purposes, I have had to eliminate any kind of pepper or tomato product. I absolutely love Tex-Mex food, and this is the closest I have come to a decent breakfast quesadilla. You could add any ingredients you wanted to spice it up.

Ingredients: [‘burrito-size flour tortillas’, ‘vegetarian refried beans’, ‘eggs’, ‘goat cheese’, ‘butter’]

Quantity of Ingredients: [“2 burrito-size flour tortillas”,”1/2 cup vegetarian refried beans, divided “,”2 eggs, scrambled “,”1 ounce goat cheese”,”2 tablespoons butter”]

Number of Servings: 2

Steps: [“spread half the butter on each tortilla, placing 1 butter side down, on a griddle. Spread half the beans on each tortilla, then spread the eggs out on the tortilla that’s on the griddle; top with feta, then the other tortilla. Pan-fry on med-high heat until nicely browned on each side. Cut into serving pieces and enjoy! May be served with salsa, quacamole, sour cream (I use plain yogurt), hot peppers; whatever you like.”]
