Roasted Veggie Pasta Primavera Salad

2

One of my most requested recipes. I love this for its versality, meaning you can add, omit, or substitute any number of the veggie ingredients to suit your preference. It is also easily scaled up or down to feed whatever size crowd. Prep time is due to cutting up the veggies and don’t be scared by the lengthy ingredient list. Roasting the veggies releases their sweet sugars and juices which is an important ingredient when combining with the pasta as it provides awesome flavors. Ingredient amounts are approximate as I basically eyeball and I’ve never had issues if more or less seasoning are added. I hope you enjoy!
