Balsamic Chicken Salad

Very tasty salad. Chicken can be cooked ahead for quick and easy assembly. You can serve with the chicken and cous cous still warm, or cooled.

Ingredients: [‘chicken breast’, ‘balsamic vinegar’, ‘fresh ground pepper’, ‘cherry tomatoes’, ‘feta cheese’, ‘avocado’, ‘gem lettuce’, ‘couscous’, ‘lemon’, ‘salt’, ‘black olives’]

Quantity of Ingredients: [“1 chicken breast”,”4 tablespoons balsamic vinegar”,”1 teaspoon black fresh ground pepper”,”10 cherry tomatoes”,”50 g feta cheese, cubed “,”1/2 avocado, diced “,”1/2 baby gem lettuce, sliced “,”50 g couscous”,”1/2 lemon, juiced “,”1/2 teaspoon salt”,”1 small handful black olives, pitted “]

Steps: [‘Place the chicken breast in a zip-lock bag with the balsamic and black pepper. Ensure the chicken is well coated, and refrigerate for at last two hours, or preferably overnight.’, ‘Once marinated, cook the chicken over a hot grill until blackened and cooked through. Set aside to rest.’, ‘Cook the cous cous according to the instructions on the packet, then pour over the lemon juice and season to taste.’, ‘Meanwhile, slice the tomatoes in half and mix with the olives, avocado, feta and lettuce.’, ‘Slice the chicken, and them mix this with the cous cous into the salad. Serve immediately.’]
