Cuban Inspired Pork Between 2 Rosemary Waffles

Slow cooker recipe…some may call this a sandwich, I call it pork heaven!

Ingredients: [‘pork tenderloin’, ‘olive oil’, ‘kosher salt’, ‘fresh ground black pepper’, ‘ground cumin’, ‘dried oregano’, ‘garlic cloves’, ‘onion’, ‘lemon’, ‘lime’, ‘low sodium chicken broth’, ‘dijon mustard’, ‘swiss cheese’, ‘dill pickle slices’, ‘deli ham’, ‘kosher salt %26 freshly ground black pepper’, ‘waffles’]

Quantity of Ingredients: [“1 lb pork tenderloin”,”2 tablespoons extra-virgin olive oil”,”1 pinch kosher salt”,”1 pinch fresh ground black pepper”,”1 tablespoon ground cumin”,”1 tablespoon dried oregano”,”4 garlic cloves, peeled and gently smashed with the side of your knife “,”1 medium onion, sliced “,”1 lemon, juiced “,”1 lime, juiced “,”1 cup low sodium chicken broth”,”3 tablespoons Dijon mustard”,”8 thin slices swiss cheese”,”6 dill pickle slices, thin the longway “,”8 thin slices deli ham”,” kosher salt u0026 freshly ground black pepper”,”8 rosemary waffles (do not separate)”]

Steps: [‘Begin by braising the pork in a not cast iron skillet. To do this you want to season the pork with olive oil salt, pepper, cumin and oregano, then add to the dry skillet and brown on all sides to form a nice crust.’, ‘Add sliced onions and smashed garlic to the bottom of your crock pot and place the pork on top.’, ‘Cover and cook for 4 hours on high heat or 8 hours on low heat.’, “30 minutes – 1 hour before it’s done cooking, add liquids to crock pot. Recover and continue cooking.”, ‘Remove pork from crock pot and let rest. Slice thinly.’, ‘TO ASSEMBLE SAMMIES: spread mustard on 4 of the rosemary waffles (recipe here: http://www.food.com/recipe/sweet-and-savory-rosemary-belgian-waffles-519641) add a layer of cheese, pickles, ham, pork then cheese again (the cheese glues everything together). Season with salt and pepper in between the ham and pork layers. Top each with the remaining waffles to make a sandwich.
