Dill and parsley make this a light ad fresh potato salad

Ingredients: [‘potatoes’, ‘red onion’, ‘salt’, ‘pepper’, ‘fresh dill’, ‘fresh parsley’, ‘mayonnaise’, ‘cider vinegar’, ‘celery’, ‘dijon mustard’]

Quantity of Ingredients: [“1 1/2 lbs potatoes, cubed and peeled “,”1/4 red onion, diced “,”1 pinch salt”,”1 pinch pepper”,”1/4 cup fresh dill”,”1/4 cup fresh parsley”,”1/2 cup mayonnaise”,”1 teaspoon cider vinegar”,”1 stalk celery, diced “,”1 teaspoon Dijon mustard”]

Number of Servings: 6

Steps: [‘Boil your potatoes until barely fork tender, drain.’, ‘chop fresh herbs, and dice onion and celery if not pre-diced.’, ‘sprinkle chopped herbs and onion, celery, onto potatoes, gently stir.’, ‘Add 1/2 cup mayonnaise and 1 teaspoon dijon mayonnaise (I have also used a garlic mustard aoili with good results).’, ‘add salt and pepper.’, ‘stir contents gently.’, ‘Taste; it will not taste quite like it will when chilled but you may want to add more of any of the ingredients to taste.’, ‘chill, covered, in refrigerator at least 2 hours, 24 hours really lets the flavors meld.’]
