Kim’s Thai Chicken Soup


My friend Kim made this soup and my husband raved about it!

Ingredients: [‘chicken stock’, ‘lemongrass’, ‘fresh ginger’, ‘bell pepper’, ‘chicken thighs’, ‘coconut milk’, ‘fish sauce’, ‘bean sprouts’]

Quantity of Ingredients: [“5 cups chicken stock”,”1 lemongrass, crushed “,”1/2 inch fresh ginger, peeled and finely chopped “,”1 -2 dried japanese bell pepper, seeded and cut up “,”2 -3 cooked chicken thighs”,”1 cup coconut milk”,”2 tablespoons fish sauce”,”2 (15 ounce) cans bean sprouts”]

Number of Servings: 4

Steps: [‘Bring stock to a boil and add lemongrass and ginger. Lower heat and simmer 5 minutes.’, ‘Add chicken to warm up, then coconut milk and fish sauce. Simmer 3 minutes.’, ‘Add bean sprouts. Simmer another minute or so. Add more fish sauce if needed to taste. Remove lemongrass and serve.’]
