Luscious Refried Beans

I hate to throw anything away. This recipe allows you to use pan drippings from a pork roast to make the best ever refried beans.
After roasting some pork ribtips in a covered pan in the oven, I refrigerated the pan drippings until the fat solidified and the broth jelled. This concentrated flavor source was used to make refried beans.

Ingredients: [‘pan dripping’, ‘pinto beans’, ‘onion’, ‘garlic clove’, ‘cheddar cheese’]

Quantity of Ingredients: [” pan dripping, from a pork roast (both fat and broth needed)”,”1 (15 ounce) can pinto beans, drained and rinsed “,”1/2 chopped onion”,”1 garlic clove, crushed and minced “,”4 ounces cheddar cheese, processed or 4 ounces your favorite cheese”]

Number of Servings: 2

Steps: [‘Scrape 1 to 2 Tbsp of the fat which has formed a layer on top of the drippings.’, “Melt the fat in a medium sized frying pan. (Don’t use a non-stick pan for this recipe, as you may damage the coating.).”, ‘Saute the onions and garlic in the fat until soft.’, ‘Add the beans and about 1/3 cup of the congealed broth. The broth will be the bottom layer, under the fat.’, ‘Mash the beans with a potato masher. Get the mix as creamy as you want it. Add more congealed broth if you want your beans soupier.’, ‘Then add the cheese and mix till it is melted.’, ‘Keep the beans firm if you are making burritos. Make them soupy if you are using them as a dip. Medium soupyness makes a great side dish.’, ‘Enjoy! These are some killer beans.’]
