This is a good alternative to the mayonnaise covered pea salads that are so common.

Ingredients: [‘apple cider vinegar’, ‘extra virgin olive oil’, ‘dijon mustard’, ‘onion powder’, ‘honey’, ‘frozen peas’, ‘fennel bulb’, ‘fresh tarragon’, ‘walnuts’]

Quantity of Ingredients: [“1 tablespoon apple cider vinegar”,”2 tablespoons extra virgin olive oil”,”1 teaspoon Dijon mustard”,”1/2 teaspoon onion powder”,”1 tablespoon honey”,”12 ounces frozen peas, thawed “,”1 fennel bulb, sliced thin “,”2 tablespoons fresh tarragon, chopped “,”1/2 cup chopped walnuts or 1/2 cup pistachios”]

Number of Servings: 4

Steps: [‘Whisk together the vinegar, olive oil, mustard, honey and onion powder in a large bowl.’, ‘Add the peas, fennel and tarragon to the bowl.’, ‘Toss to coat. Season to taste with salt and pepper.’, ‘Above steps can be done in advance. Top with nuts immediately before serving to maintain crispiness.’]
