Prairie Braised Buffalo Shanks

If you’ve never tried buffalo (bison) I can highly recommend it. It’s delicious and healthier than beef.

Quantity of Ingredients: [“4 buffalo, shank cuts each 1 . 5 inches thick “,”2 tablespoons vegetable oil”,”1 cup barley”,”2 quarts cold water”,”3 garlic cloves, minced “,”1 bay leaf”,”1 large onion”,”2 large carrots, peeled and sliced “,”2 celery ribs, sliced thinly “,”1 1/2 teaspoons salt”,”1/2 teaspoon pepper, fresh ground “,”5 fresh tomatoes”,”1/2 cup fresh parsley, chopped “]
