Scandinavian Rice Pudding

This is a recipe my grandmother taught me to use up leftover rice. It’s a bit different from the usual rice pudding, but it’s easy and very tasty.

This recipe calls for raisins, but you can omit them or substitute other dried fruits like cranberries if you prefer.

Please note that the prep time does not include the time needed to cook the rice. I usually use leftovers.

Ingredients: [‘cooked rice’, ‘eggs’, ‘sugar’, ‘salt’, ‘milk’, ‘raisins’, ‘lemon juice’, ‘cinnamon’, ‘nutmeg’, ‘butter’]

Quantity of Ingredients: [“2 cups cooked rice”,”3 eggs, beaten “,”1/2 cup sugar”,”1/4 teaspoon salt”,”3 1/2 cups milk”,”1/2 cup raisins”,”1/2 teaspoon lemon juice”,”1 tablespoon cinnamon”,”1 teaspoon nutmeg”,”1 tablespoon butter”]

Number of Servings: 6

Steps: [‘Combine rice, eggs, sugar, salt, milk, raisins, and lemon.’, ‘Spray a baking dish with cooking spray and pour in the rice mixture. Tap the dish on the counter to settle it.’, ‘Sprinkle the top with the cinnamon and nutmeg and drop small pieces of the butter evenly across the pudding.’, ‘Bake for 1 hour and 350°F May be served warm or cold.’]
