Tortellini & Bacon Meatballs

This is a variation of a recipe from Better Homes & Gardens. I substituted tortellini for their orecchiette pasta and fire roasted tomatoes for their regular tomatoes.

Ingredients: [‘ground pork’, ‘bacon’, ‘minced garlic cloves’, ‘pepper’, ‘olive oil’, ‘cheese tortellini’, ‘shallots’, ‘diced fire-roasted tomatoes’, ‘spinach’, ‘parmesan cheese’, ‘chicken broth’]

Quantity of Ingredients: [“12 ounces ground pork”,”4 slices of thick bacon, chopped into little pieces “,”2 minced garlic cloves”,”1/2 teaspoon pepper”,”2 tablespoons olive oil”,”19 ounces cheese tortellini”,”2 small shallots, thinly slices “,”2 (14 ounce) cans diced fire-roasted tomatoes”,”2 cups spinach, torn “,” shaved parmesan cheese”,”1/2 cup chicken broth”]

Number of Servings: 8

Steps: [‘Cook tortellini according to directions, set aside.’, ‘Combine pork, bacon, garlic & pepper. Shape into 1″ balls. Brown until crisp and set aside.’, ‘Retain all grease for meatballs. Cook shallots until tender.’, ‘Add meatballs, tomatoes, broth, tortellini & salt. Cook until spinach wilted and well blended.’]
