Frankenstein Minestrone Soup

I created this out of necessity – I wanted to make minestroni soup, but I didn’t have most of the ingredients, & I had a bunch of stuff that needed to be used up, so I threw it all in a pot & came up with a soup actually worth writing down. This can easily be doubled & it freezes beautifully

Ingredients: [‘sausages’, ‘corn’, ‘celery’, ‘carrot’, ‘red onion’, ‘garlic clove’, ‘beef broth’, ‘tomato paste’, ‘pizza sauce’, ‘small shell pasta’, ‘oregano’, ‘sage’, ‘thyme’, ‘parsley’]

Quantity of Ingredients: [“3 sausages”,”10 ounces corn”,”2 stalks celery, chopped, with leaves “,”1 carrot, chopped “,”1/4 cup red onion, sliced thin “,”1 garlic clove”,”8 cups beef broth”,”16 ounces tomato paste”,”1/4 cup pizza sauce”,”1/2 cup small shell pasta (acini de pepe)”,”1 dash oregano”,”1 dash sage”,”1 dash thyme”,”1 dash parsley”]

Number of Servings: 6

Steps: [‘Slice sausages into bite sized pieces & fry in bottom of pot’, ‘Add broth, corn, carrots, & celery. Simmer 10 minutes’, ‘Add all other ingredients & cook for 20 minutes.’]
