Parmesan-Kale Salad

Ingredients: [‘kale’, ‘lemons’, ‘garlic clove’, ‘dijon mustard’, ‘olive oil’, ‘parmesan cheese’]

Steps: [‘Prepare ingredients: Rinse kale, trim and discard long stems. THinly slice leaves crosswise. Using hands massage kale until beginning to soften (1-2 minutes). Halve lemons. Mince garlic. While still on cutting board sprinkle with salt and with knife at 45 degree angle carefully scrape mixture. Repeat until garlic is broken down and paste forms. Place in a large bowl.’, ‘Make Salad: Add mustard, juice of 1.5 lemons, 3T olive oil, 1/4tsp salt, and pepper to bowl with garlic paste. Whisk to combine. Add parmesan and gently stir to combine. Then add kale to bowl and toss to combine.’]
