Sauce Batarde

This is good over vegetables and/or fish.

Ingredients: [‘butter’, ‘flour’, ‘water’, ‘egg yolks’, ‘milk’, ‘lemon juice’, ‘salt and pepper’]

Quantity of Ingredients: [“3 tablespoons butter”,”4 tablespoons flour”,”2 cups water”,”3 egg yolks”,”1/3 cup milk”,”1 teaspoon lemon juice”,” salt and pepper”]

Number of Servings: 1

Steps: [‘Melt the butter in the saucepan and add flour, making a roux. Cook for 1-2 minutes then add the water. Bring to a boil and cook for 5 more minutes.’, ‘Beat the egg yolks and the milk. Combine with the first mixture, beating constantly with a whisk. Season to taste.’, ‘Strain the sauce through a very fine sieve or several layers of cheesecloth. Add lemon juice just before serving.’]
