Healthy side that goes great with Southwestern/Spanish dishes or it can also stand alone as a side

Ingredients: [‘quinoa’, ‘vegetable stock base’, ‘black beans’, ‘red pepper’, ‘jalapeno’, ‘fresh cilantro’, ‘white onion’, ‘frozen corn’, ‘lime juice’, ‘apple cider vinegar’, ‘lemon juice’]

Quantity of Ingredients: [“2 cups quinoa, uncooked “,”1/2 tablespoon vegetable stock base”,”1 (12 ounce) can black beans, rinsed “,”1 red pepper, chopped “,”1 cup jalapeno, from a jar, chopped “,”1 bunch fresh cilantro, chopped “,”1 medium white onion, chopped “,”1 (10 ounce) bag frozen corn”,”1/4 cup lime juice”,”1 dash apple cider vinegar”,”1 dash lemon juice”]

Number of Servings: 4

Steps: [‘cook quinoa as directed on package with 4 C water and the vegetable base.’, ‘while the quinoa is cooking, combine the black beans, red pepper, jalapeƱos, cilantro, and onion in a bowl.’, ‘When the quinoa is done cooking add the frozen corn to it and stir. let cool a bit.’, ‘combine the quinoa mix and the veggies, add the remaining ingredients, stir and serve. Can also be refrigerated for later.’]
