Sweet Potato Casserole With Pecan and Coconut Topping

This is my MIL’s recipe. It’s great. I am constantly asked for the recipe so I thought I would post it on Zaar so everyone can enjoy it!

Ingredients: [‘sweet potatoes’, ‘sugar’, ‘butter’, ‘eggs’, ‘vanilla’, ‘milk’, ‘coconut’, ‘pecans’, ‘brown sugar’, ‘flour’, ‘butter’]

Quantity of Ingredients: [“4 sweet potatoes”,”1 cup sugar”,”1/3 cup butter”,”2 beaten eggs”,”1 teaspoon vanilla”,”1/2 cup milk”,””,”1 cup coconut”,”1 cup pecans”,”1 cup brown sugar”,”1/3 cup flour”,”1/3 cup butter”]

Number of Servings: 8

Steps: [‘Skin, mash and boil potatoes. Let cool. Mix cooled mashed potatoes with sugar, butter, eggs, vanilla, and milk until well blended. Put in 2 1/2 quart baking dish.’, ‘Mix all topping ingredients in seperate bowl until mixture resembles crumbs. Put over potato mixture. Bake casserole in 375 degree oven for 20 minutes. Enjoy!’]
