Simplest Chilled Cucumber Soup

I’ve had this ultra-easy recipe for many years. No cooking needed, just a food processor or blender. It doesn’t get much simpler. For variety you could add some dill or other fresh herbs, a handdful of raw or cooked spinach or leftover peas, even a ripe avocado. No cream? Use whole milk, buttermilk or Greek yogurt! I recommend unwaxed cucumbers. Lime juice can be substituted for lemon if you add some green chiles to the mix.

Ingredients: [‘cucumber’, ‘chicken broth’, ‘fresh cilantro’, ‘light cream’, ‘fresh lemon juice’]

Quantity of Ingredients: [“1 lb cucumber, cut into chunks “,”1 1/4 cups chicken broth or 1 1/4 cups chicken stock”,”3/4 cup fresh cilantro”,”1/2 cup light cream”,”1/4 cup fresh lemon juice”]

Number of Servings: 4

Steps: [‘Puree all ingredients in a food processor. Add salt to taste. Chill at least 2 hours, preferably overnight.’]
