Turkey-Vegetable Sloppy Joes

Sloppy Joes that are great tasting and great for you! (Moderately adapted from a recipe in Back Home magazine, March/April 2007, with inspiration from BurtonFanatic’s fantastic Sloppy Garden Joes.) Note: The no-salt-added items in this recipe can be replaced with their higher sodium counterparts–just add less additional salt.

Ingredients: [‘olive oil’, ‘ground turkey’, ‘yellow onion’, ‘carrot’, ‘frozen whole kernel corn’, ‘frozen green pea’, ‘no-salt-added diced tomatoes’, ‘no-salt-added tomato sauce’, ‘white vinegar’, ‘fresh lemon juice’, ‘worcestershire sauce’, ‘brown sugar’, ‘dijon-style mustard’, ‘ground paprika’, ‘salt’, ‘multi-grain hamburger buns’]

Quantity of Ingredients: [“1 tablespoon olive oil”,”1 lb ground turkey (I use frozen, thawed)”,”1 yellow onion, chopped “,”1 carrot, chopped “,”2/3 cup frozen whole kernel corn”,”2/3 cup frozen green pea”,”1 (14 1/2 ounce) can no-salt-added diced tomatoes”,”1 (8 ounce) can no-salt-added tomato sauce”,”1 tablespoon white vinegar”,”1 tablespoon fresh lemon juice”,”1 tablespoon Worcestershire sauce”,”1 tablespoon brown sugar, packed “,”1 teaspoon dijon-style mustard”,”1 teaspoon ground paprika”,”3/4 teaspoon salt (or to taste)”,” hot dog buns or bread”]

Steps: [‘Heat a large skillet over medium heat; add olive oil, ground turkey, chopped onion, chopped carrot, and frozen corn and peas. Cook until turkey has browned and vegetables are soft, stirring as necessary.’, ‘Mix in canned diced tomatoes, tomato sauce, white vinegar, lemon juice, worcestershire sauce, brown sugar, dijon-style mustard, ground paprika, and salt. Reduce heat and simmer (uncovered) until thick, about 30 minutes, stirring occasionally.’, ‘Toast buns or bread, if desired; then top with turkey mixture. Serve hot.’]
