Umberto’s Calves’ Liver

This recipe comes from a little book called ABC Jiffy Cookery. I’ve had it for over 50 years. I haven’t cooked any of the recipes yet. I’m putting them on here so I can find them easier.

Ingredients: [‘liver’, ‘butter’, ‘onion’, ‘garlic cloves’, ‘lemon%2c juice of’, ‘salt and pepper’, ‘white wine’, ‘mushrooms’, ‘parsley’]

Quantity of Ingredients: [“2 lbs liver, cut into small pieces “,”3 tablespoons butter”,”1 onion, chopped fine “,”2 garlic cloves, minced “,”1/2 lemon, juice of”,” salt and pepper”,”1/4 cup white wine”,”1 (4 ounce) can mushrooms”,”1 tablespoon parsley, chopped “]

Number of Servings: 4

Steps: [‘Melt butter, add the onion, garlic, lemon juice, salt, pepper, and liver. Cook for 5 minutes over hot fire, shuffling pan constantly. Add wine, mushrooms and parsley. Cook 3 minutes more.’]
