Lomi Lomi Lettuce Cups

Hawaiian appetizer. Adapted from a recipe found on the internet.

Ingredients: [‘coarse sea salt’, ‘salmon fillets’, ‘white onion’, ‘green onions’, ‘tomatoes’, ‘lettuce leaves’]

Quantity of Ingredients: [“1/4 cup coarse sea salt”,”8 ounces sashimi grade salmon fillets”,”1/2 cup white onion, fine dice “,”3 tablespoons green onions, finely chopped “,”1 cup tomatoes, diced “,”16 lettuce leaves”]

Number of Servings: 4

Steps: [‘Place salt and fish in ziploc bag, Shake to coat. Place in refrigerator 8 hours to overnight.’, ‘Remove fish from bag, rinse well. Soak in ice water, changing water every 30 minutes, for 2 hours. Drain fish, pat dry, dice.’, ‘Meanwhile soak diced onion in ice water for 15 minutes.’, ‘Add onions and tomatoes to fish.’, ‘Spoon fish into lettuce leaves. Iceberg or romaine work well.’]
